  • Author: Dinah A.

Description

Eggs Florentine is one of those dishes that instantly makes you think of cozy weekend mornings, leisurely breakfasts, and indulgent brunches shared with family or friends. With its perfect combination of creamy, cheesy goodness and fresh, earthy spinach, this baked version elevates the classic dish to new heights. Imagine pulling a bubbling, golden skillet from the oven, the aroma filling your kitchen as your family gathers, plates at the ready. This recipe offers all the elegance of a café brunch but is simple enough to make at home. Whether you’re hosting or just treating yourself, these baked eggs are sure to impress.

Ingredients

  • Baby Spinach – 4 cups
  • Butter – 2 tablespoons
  • Garlic – 2 cloves, minced
  • Heavy Cream – ½ cup
  • Nutmeg – A pinch
  • Salt and Pepper – To taste
  • Eggs – 4 large
  • Grated Parmesan Cheese – 2 tablespoons
  • Shredded Mozzarella Cheese – ½ cup

Instructions

  • Prepare the Spinach Mixture:
Start by melting the butter in a large skillet over medium heat. Add the minced garlic, letting it cook until fragrant—about 30 seconds. Toss in the baby spinach, stirring frequently, until wilted. Season with salt, pepper, and a pinch of nutmeg to enhance the earthy flavor of the spinach.
  • Layer the Base:
Preheat your oven to 375°F (190°C). Transfer the cooked spinach mixture into a greased baking dish or individual ramekins. Use a spoon to spread it evenly, creating a bed of greens for your eggs to rest on.
  • Create the Creamy Sauce:
Pour the heavy cream over the spinach, spreading it evenly. Sprinkle the grated Parmesan and half of the shredded mozzarella over the top. The cheese will melt into the cream, creating a luscious sauce as it bakes.
  • Add the Eggs:
Crack each egg into a small bowl, then carefully slide it over the spinach mixture, spacing them evenly. Sprinkle the remaining mozzarella cheese on top for that irresistible golden finish.
  • Bake to Perfection:
Place the dish in the oven and bake for 12-15 minutes, or until the egg whites are set but the yolks remain slightly runny. If you prefer firmer yolks, bake for a few additional minutes.
  • Serve and Enjoy:
Carefully remove from the oven, letting it cool slightly before serving. Garnish with freshly cracked black pepper or a sprinkle of parsley for a pop of color. Serve with crusty bread or a side salad for a complete meal.

Notes

  • Use fresh spinach for the best flavor, but frozen spinach can be substituted—just be sure to thaw and squeeze out excess water first.
  • This dish is best enjoyed immediately but can be reheated gently in the oven or microwave.
