While bruschetta was a frequent appetizer in our home, it wasn’t long before she cleverly turned it into a full meal by tossing the vibrant topping with spaghetti, giving it a rustic charm that stayed with me ever since.

  • 500g spaghetti (or pasta of choice)
  • 4 vine-ripened tomatoes, diced
  • 1/2 small red onion, finely chopped
  • 2 tbsp fresh basil, chopped (plus extra for garnish)
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp sea salt (adjust to taste)
  • 1/4 tsp black pepper
  • 5 tbsp extra-virgin olive oil, divided
  • 3 tbsp balsamic glaze
  • Optional: crumbled feta, goat cheese, or shaved Parmesan

Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a rolling boil. Add the spaghetti and cook until al dente, following the package instructions. Drain well, toss with 2 tablespoons of olive oil to prevent sticking, and set aside in a large bowl.

Step 2: Make the Bruschetta Mixture

In a separate bowl, mix together the diced tomatoes, red onion, garlic, basil, oregano, salt, pepper, and 3 tablespoons of olive oil. Give it a good stir and let it sit for 10–15 minutes. This resting time lets the tomatoes absorb the flavors and soften slightly.

Step 3: Combine Pasta and Bruschetta

Pour the marinated bruschetta mixture over the pasta and gently toss to combine. Let the vibrant colors and fragrances fill the kitchen—it’s part of the joy.

Step 4: Add the Balsamic Drizzle
