½ teaspoon black pepper

½ teaspoon paprika

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon crushed red pepper flakes

1 cup honey

2 tablespoons fresh lime juice

1 tablespoon Dijon mustard

2 teaspoons soy sauce

1 teaspoon hot sauce (like Tabasco)

1 teaspoon grated fresh ginger


Instructions

Step 1: Prep the Chicken Start by patting the chicken thighs dry with paper towels. This little step makes a huge difference—it helps the skin crisp up beautifully.

In a small bowl, mix together the seasoned salt, black pepper, paprika, garlic powder, onion powder, allspice, and crushed red pepper flakes. Rub this spice mix generously all over the chicken. I like to get in there with my hands—it’s messy but so worth it.

Step 2: Sear the Chicken Heat the olive oil in a large skillet over medium-high heat. Once it’s shimmering, add the chicken thighs skin-side down. Listen for that satisfying sizzle! Cook them for about 5-6 minutes until the skin is deeply golden and crispy. Flip them over and cook another 2-3 minutes, then transfer to a plate.

Cover loosely with foil and bake in a preheated 375°F oven for about 25-30 minutes, until the chicken is cooked through (internal temp should be 165°F).
