4 boneless skinless chicken breasts

1 tablespoon olive oil

2 cups mushrooms, finely chopped

3 cloves garlic, minced

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (optional, for garnish)


Instructions

Step 1: Preheat and Prep
Start by preheating your oven to 375°F (190°C). While the oven warms up, take a moment to prepare your baking dish by lightly greasing it or lining it with parchment paper.

Step 2: Sauté the Filling
Heat the olive oil in a skillet over medium heat. Add the chopped mushrooms and sauté for about 5–7 minutes, or until they release their moisture and become golden brown. Toss in the garlic and cook for an additional minute—your kitchen will start to smell amazing at this point.

Once everything is cooked through and fragrant, remove from heat and let the mixture cool slightly before stirring in the mozzarella, Parmesan, and Italian seasoning. This filling should be cheesy, garlicky, and slightly creamy.

Step 3: Butterfly the Chicken
This step sounds fancy but is super easy! Take each chicken breast and use a sharp knife to cut a pocket horizontally through the side. Be careful not to cut all the way through—you just want to create a nice little pocket for stuffing.
