  • Author: Diane M

Description

There’s nothing quite like a home-cooked meal that delivers on both comfort and flavor with minimal effort. This Melt-In-Your-Mouth Chicken is exactly that—a simple yet incredibly delicious dish that requires just a handful of ingredients. With tender, juicy chicken baked in a creamy, flavorful coating, this recipe is perfect for busy weeknights, cozy family dinners, or even a meal prep staple that everyone will love.

If you’ve ever struggled to keep chicken breast from drying out, this recipe will change everything. The secret lies in a rich, tangy, and slightly cheesy topping that locks in moisture and infuses the chicken with irresistible flavor. The result? Chicken so tender and juicy that it practically melts in your mouth!

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup mayonnaise
  • ½ cup plain Greek yogurt
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt

  • ½ teaspoon black pepper

Instructions

Step 1: Preheat the Oven

Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper to prevent sticking.

Step 2: Prepare the Chicken

Pat the chicken breasts dry with a paper towel. This helps the creamy coating stick better and ensures even cooking. If your chicken breasts are very thick, consider slicing them in half or pounding them slightly to an even thickness.

Step 3: Make the Creamy Coating

In a medium mixing bowl, combine the mayonnaise, Greek yogurt, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper. Stir until well blended. This mixture will create a flavorful and moisture-sealing crust on the chicken.

Step 4: Coat the Chicken

Place the chicken breasts in the prepared baking dish. Spread the creamy mixture evenly over each piece, making sure to fully cover the tops.

Step 5: Bake to Perfection

Bake uncovered for 35-40 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The top should be golden brown and slightly crispy.

Step 6: Let It Rest & Serve

Once done, remove the chicken from the oven and let it rest for 5 minutes before serving. This helps retain all the juices, making every bite extra tender and delicious.

Notes

  • You can substitute sour cream for Greek yogurt if you prefer a richer flavor.
  • For an even crispier topping, broil the chicken for the last 2-3 minutes of baking.
  • This recipe pairs well with roasted vegetables, mashed potatoes, or a simple green salad.
