  • 2 eggs

  • ½ lemon, juiced
  • 1 tablespoon chopped fresh herbs (such as parsley or chives)
  • Optional: red pepper flakes, sesame seeds, or crumbled feta for garnish

Instructions

Step 1: Prepare the Avocado Mash

Start by cutting the avocado in half, removing the pit, and scooping the flesh into a bowl. Mash it with a fork until you reach your desired consistency—some people like it super smooth, while others prefer it a little chunky for texture.

Squeeze in the fresh lemon juice and season with salt, black pepper, and garlic powder. Mix everything well and set aside.

Step 2: Cook the Eggs

You can prepare your eggs however you prefer—fried, poached, or even scrambled.

  • For fried eggs: Heat a small pan over medium heat with a little butter or oil. Crack the eggs into the pan and cook until the whites are set but the yolk is still runny (or fully cooked if you prefer).
