Breakfast Rolls

  • Author: Diane M

Description

There’s something magical about waking up to the smell of breakfast wafting through the house. These savory Breakfast Rolls have become a cherished part of our family weekend mornings, where we linger over coffee, swap stories from the week, and enjoy a hearty, homemade meal together. There’s no rush, no to-do list—just the simple joy of good food and good company. The buttery crescent dough, filled with fluffy eggs, crumbled beef sausage, crispy turkey bacon, and gooey cheddar cheese, makes for a perfect breakfast indulgence. Whether you’re planning a special brunch or just looking to elevate a lazy Sunday morning, these rolls are guaranteed to delight everyone around the table.

In our house, these rolls have even become a holiday tradition. Picture this: frost sparkling on the windows, a pot of coffee brewing, and the kids (or adults!) sneaking peeks at the oven to see if the breakfast rolls are ready. There’s something so comforting and nostalgic about this dish—it brings people together and makes any morning feel special.

Ingredients

  • Refrigerated Crescent Roll Dough: 2 cans (8 ounces each)
  • Whipped Cream Cheese: 1/3 cup (chive and onion flavor recommended)
  • Eggs: 4 large
  • Red Bell Pepper: 2 tablespoons, finely diced
  • Milk: 1 tablespoon
  • Black Pepper: 1/4 teaspoon
  • Ground Beef Sausage: 8 ounces, cooked and crumbled
  • Turkey Bacon: 4 slices, cooked and crumbled
  • Shredded Cheddar Cheese: 1 1/2 cups

Instructions

Prepare the Filling

  • Cook the Meat: Heat a skillet over medium heat and cook the ground beef sausage until browned and crumbly. Transfer it to a paper towel-lined plate to drain any excess grease. Repeat with the turkey bacon, cooking it until crisp, and crumble once it’s cool enough to handle.
  • Scramble the Eggs: In a mixing bowl, whisk together the eggs, diced bell pepper, milk, and black pepper. Pour the mixture into a non-stick skillet and cook over medium heat, stirring gently until just set but still soft. Set aside to cool slightly.

2. Prepare the Dough

  • Preheat and Prep: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper for easy cleanup.
  • Unroll the Dough: Roll out the crescent roll dough on a clean surface. If your dough is perforated, gently pinch the seams together to form two large rectangles.

3. Assemble the Rolls

  • Spread the Cream Cheese: Evenly spread the whipped cream cheese over the surface of the dough rectangles.
  • Add the Fillings: Distribute the scrambled eggs, crumbled beef sausage, turkey bacon, and shredded cheddar cheese over the cream cheese. Be sure to leave a small border around the edges for easier rolling.
  • Roll and Slice: Starting from the longer side, carefully roll each rectangle into a tight log. Use a sharp serrated knife or unflavored dental floss to slice each log into six equal pieces.

4. Bake

  • Arrange the Rolls: Place the sliced rolls cut-side up in the prepared baking dish, leaving a little space between them to allow for expansion.
  • Bake to Perfection: Bake for 24-26 minutes, or until the rolls are golden brown and the cheese is bubbly. For an extra touch, brush the tops with melted butter and sprinkle with chopped parsley before serving.

Notes

  • Serving Suggestions: Serve alongside fresh fruit or yogurt for a complete breakfast. These rolls also pair well with a green salad or a bowl of soup for a satisfying lunch.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave for 30 seconds or in the oven at 350°F for 10 minutes to enjoy them fresh.
