These muffins are not only delicious but also a nostalgic nod to the comforting breakfasts of childhood. Let’s dive into the recipe and make some magic in your kitchen!

Ingredients

Scale
  • 8 cups of day-old bread, cut into cubes
  • 1 cup of milk
  • 4 large eggs
  • ½ cup of heavy cream
  • ½ cup of granulated sugar
  • 2 teaspoons of vanilla extract
  • 1 teaspoon of ground cinnamon
  • ¼ teaspoon of salt
  • ¼ cup of melted butter

For the Cinnamon-Sugar Topping:

  • 3 tablespoons of granulated sugar
  • 1 teaspoon of ground cinnamon

Instructions

  • Prepare the Bread Base
Begin by cutting your bread into small cubes. Using day-old bread works best as it absorbs the custard mixture without becoming too soggy. Set the cubes aside in a large mixing bowl.
  • Make the Custard
In a separate bowl, whisk together the milk, eggs, heavy cream, sugar, vanilla extract, cinnamon, and salt. Whisk until smooth and the sugar has dissolved.
  • Combine Bread and Custard
Pour the custard mixture over the bread cubes, gently folding to ensure every piece is well-coated. Let the mixture sit for 10-15 minutes to allow the bread to soak up the custard.
  • Prepare the Muffin Pan
Preheat your oven to 350°F (175°C) and grease a muffin tin generously with melted butter or non-stick spray.
  • Assemble the Muffins
Divide the soaked bread cubes evenly among the muffin cups, gently pressing them down to compact slightly.
  • Add the Topping
In a small bowl, mix the sugar and cinnamon for the topping. Sprinkle a generous amount over each muffin, ensuring an even coating.
  • Bake to Perfection
Bake in the preheated oven for 25-30 minutes or until the tops are golden brown and slightly crisp.
  • Cool and Serve
Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Serve warm, with a drizzle of maple syrup or a dollop of whipped cream if desired.

Notes

  • These muffins are best enjoyed fresh but can be stored for up to 3 days in an airtight container.
  • Reheat muffins in the oven at 325°F for 5-7 minutes to regain their crispy edges.
