Perfect for meal prepping or enjoying fresh, this wrap will soon become a staple in your weekly lineup.

Let’s dive into how you can bring this copycat recipe to life!

Ingredients

  • Egg Whites: 1 1/2 cups
  • Whole Eggs: 2
  • Baby Spinach: 2 cups
  • Crumbled Feta Cheese: 1/2 cup
  • Greek Yogurt: 1/4 cup
  • Cooked Turkey Ham: 4 oz, chopped
  • Whole Wheat Tortillas: 4 large
  • Garlic Powder: 1/2 tsp
  • Onion Powder: 1/2 tsp
  • Salt: 1/2 tsp
  • Black Pepper: 1/4 tsp
  • Avocado Oil Spray (or olive oil): for cooking

Instructions

  • Prepare the eggs:
In a medium bowl, whisk the egg whites, whole eggs, Greek yogurt, garlic powder, onion powder, salt, and pepper until well combined. The yogurt adds a creaminess that makes the egg mixture extra fluffy.
  • Sauté the spinach:
Heat a nonstick skillet over medium heat and lightly spray with avocado oil. Add the baby spinach and cook until wilted, about 1–2 minutes. Remove and set aside.
  • Cook the eggs:
In the same skillet, pour the egg mixture and cook over medium-low heat. Stir gently with a spatula until the eggs are soft and slightly set. Remove from heat – they’ll continue to cook slightly as they cool.
  • Assemble the wraps:
Lay a tortilla flat on a clean surface. Place a quarter of the egg mixture in the center, followed by some sautéed spinach, turkey ham, and crumbled feta cheese. Fold in the sides and roll tightly like a burrito.
  • Heat the wraps:
To achieve a crispy exterior, heat the assembled wraps in the skillet over medium heat for 1–2 minutes per side, pressing lightly with a spatula until golden brown.
  • Serve or store:
Enjoy immediately or wrap tightly in foil for meal prep. These wraps can be stored in the refrigerator or freezer for a convenient grab-and-go option.

Notes

  • Tortilla Tips: Whole wheat tortillas are ideal for their flavor and texture, but feel free to substitute with low-carb, gluten-free, or spinach wraps if preferred.
  • Reheating Tips: For best results, reheat in the oven or air fryer for a crispy finish.
