In this recipe, we’ll walk you through making the perfect steak burritos from scratch. We’ll go over how to cook the steak to perfection, assemble the burritos with the best ingredients, and even share tips for storing and reheating. Whether you’re a burrito pro or making them for the first time, you’re in for a treat.

Ingredients

Scale

For the Steak:

  • 1 ½ lbs beef steak (flank, skirt, or sirloin)
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Burritos:

  • 4 large flour tortillas
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • ½ cup diced tomatoes
  • ½ cup shredded lettuce
  • ½ cup shredded cheese (cheddar or Monterey Jack)
  • ¼ cup diced onions
  • ¼ cup chopped cilantro
  • ½ cup sour cream
  • ½ cup guacamole
  • ½ cup salsa

Instructions

Step 1: Marinate the Steak

For the best flavor, marinate the steak for at least 30 minutes, but if you have time, letting it sit for a few hours or overnight will enhance the taste even more. In a bowl, mix olive oil, lime juice, garlic, cumin, chili powder, smoked paprika, salt, and pepper. Place the steak in a resealable bag or shallow dish and coat it evenly with the marinade. Cover and refrigerate.

Step 2: Cook the Steak

Heat a large skillet or grill pan over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes per side, depending on thickness and desired doneness. Let the steak rest for 5 minutes before slicing it into thin strips.

Step 3: Prepare the Toppings

While the steak is resting, prepare all your burrito ingredients. Warm up the tortillas on a dry skillet or microwave them for a few seconds so they’re pliable. Have your rice, beans, veggies, and sauces ready to go.

Step 4: Assemble the Burritos

Lay a tortilla flat and start layering: spread a scoop of rice, then beans, followed by the steak strips. Add diced tomatoes, onions, lettuce, cheese, cilantro, and any other toppings you love. Finish with sour cream, guacamole, and salsa.

Step 5: Fold and Serve

To fold the burrito, tuck in the sides first, then roll from the bottom up, keeping everything tight. If needed, place the burrito seam-side down in a heated pan for a minute to seal it. Serve warm and enjoy!

Notes

  • If you want to make these burritos healthier, use whole wheat tortillas and swap out sour cream for Greek yogurt.
  • For a spicier kick, add hot sauce or diced jalapeños to the mix.
  • You can swap out white rice for cilantro-lime rice for an extra zesty flavor.
